Can't you use a gel blending medium instead of using water for acrylic paints for blending the paint?

I'm as new as you can get to art in my old age. I am using acrylic because it's cheaper, but I'm finding that I don't like acrylics. I have noticed I use more paint and it does not blend very well besides drying too quickly…frustrating! I'm so excited that you are covering acrylics!!!

First impression of the left hand painting is different elements which happen to be floating on the same canvas. Softening helps unify the elements in the right hand painting so it gives the impression of an overall scene.
